I like making this meal when we need something cheap and filling. It has really good flavor and is a great side to burritos.
Yellow Rice & Black Beans:

Yellow Rice:
2 cups long-grain rice
4 cups water
2 cloves garlic, smashed
1 teaspoon turmeric
1 1/2 teaspoons salt
1 bay leaf
Put all ingredients in a large pot, stir well and bring to a boil over medium-high heat. Reduce to simmer, cover and cook for 20 minutes. Remove from heat, let sit 5 minutes.
Spicy Black Beans:
2 cups dried black beans
3 tablespoons extra virgin olive oil
1 onion, choppped
1 jalapeno pepepr, chopped
2 cloves garlic, chopped
1 bay leaf
1 1/2-2 teaspoons salt
sour cream
Quick soak the beans: Put the beans in a pot and cover with water by 2 inches. Bring to a boil and cook for 2 minutes, cover and let soak for 1 hour. Drain the beans.
Heat olive oil in a large pot, add the onion, jalapeno, garlic and bay leaf and cook for 5 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, reduce the heat and simmer for 2 1/2-3 hours, until the beans are tender.
Serve the rice with the beans and topped with sour cream.
